Ingredients
- 1-2 C. fresh arugula
- ¼ C. cucumber, quartered
- 1 avocado, sliced
- ¼ C. cherry tomatoes, quartered
- ¼ C. red onion, diced
- ¼ C. chickpeas
- ¼ C. kalmata olives, sliced
- ½ C. Nancy’s Organic Whole Milk Cottage Cheese
- 2-3 Tbsp. olive oil
- 1-2 Tbsp. balsamic vinegar
- Salt & pepper to taste
Directions
- Wash your fresh arugula and place in a salad bowl.
- Prep all salad ingredients by slicing & measuring as necessary.
- Combine salad ingredients in a large bowl over the arugula and top with a generous dollop of Nancy’s Organic Cottage Cheese.
- Drizzle with olive oil & balsamic vinegar, and sprinkle with salt & pepper to taste.
- Toss & enjoy!
