Spiced Apple & Pear Crumble Parfait

Ingredients

Crumble Topping

  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar (packed)
  • 1/2 tsp. cinnamon
  • Pinch of salt
  • 4 Tbsp. Nancy’s Organic Unsalted Butter, cold and cubed
Spiced Apple & Pear Filling
  • 2 apples, peeled, cored, and diced
  • 2 pears, peeled, cored, and diced
  • 2 Tbsp. maple syrup or honey
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • Pinch of nutmeg
  • 1 tsp. lemon juice
  • 1 tsp. vanilla extract
Parfait Layer
  • Nancy’s Organic Whole Milk Yogurt

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine oats, flour, brown sugar, cinnamon, and salt.
  3. Add the cold cubed Nancy’s Organic Unsalted Butter. Use your fingers to mix until it resembles crumbs / crumble topping.
  4. Spread on a baking sheet and bake for 15–18 minutes, stirring once halfway, until golden and crisp. Let cool.
  5. In a saucepan over medium heat, add apples, pears, maple syrup, spices, lemon juice, and vanilla.
  6. Cook for 10–12 minutes, stirring occasionally, until the fruit softens.
  7. Let the mixture cool slightly before layering.
  8. In glasses or jars, layer in the following order: a spoonful of spiced apple-pear filling, a dollop of yogurt, a sprinkle of crumble topping. Repeat the layers once or twice, ending with yogurt and a final crumble sprinkle.
