Ingredients
- 1 C. Nancy’s Organic Whole Milk Cottage Cheese
- 2 Large eggs
- ½ C. flour (all-purpose or whole wheat)
- 1 C. blueberries (fresh) or apples (cubed)
- 2-3 Tbsp. maple syrup
- 1 Tsp. vanilla extract
- ½ Tsp. baking powder
- 2 Tsp. Cinnamon (if using apples)
- Nancy’s Organic Unsalted Butter (for serving)
Directions
- Preheat oven to 350°F (175°C). Grease or line a small baking pan (8×8 inches works well) with parchment paper.
- In a large bowl, whisk together the cottage cheese, eggs, maple syrup, and vanilla.
- Add in the flour, baking powder, and salt. Mix until well combined.
- Gently fold in the berries or apples (Add cinnamon if using apples).
- Pour the mixture into the prepared baking pan and spread evenly. Top with more fruit.
- Bake for 25–30 minutes, or until the top is set and lightly golden.
- Let cool, then slice into bars.
- Serve warm with Nancy’s Organic Unsalted Butter, or store in an air-tight container to enjoy later!
