Ingredients
- 3 cups old-fashioned oats
- 1 cup chopped almonds
- 1/2 cup dried cranberries
- 1/4 cup honey
- 1/4 cup molasses
- 1/2 cup melted coconut oil
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt

Directions
- Preheat your oven to 325°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the old-fashioned oats and chopped nuts. Set aside.
- In a small saucepan over low heat, combine the honey, molasses, melted coconut oil, ground ginger, ground cinnamon, ground nutmeg, and salt. Stir continuously until the mixture is well combined and warm, but do not bring it to a boil.
- Pour the warm gingerbread mixture over the oats and nuts in the mixing bowl. Use a spatula or wooden spoon to thoroughly coat the dry ingredients with the gingerbread mixture. Ensure everything is evenly coated.
- Spread the granola mixture evenly on the prepared baking sheet. You can use a spatula to press it down slightly for more clumps in your granola.
- Bake for about 20-25 minutes or until the granola is golden brown. Be sure to stir the granola every 10 minutes to ensure even cooking.
- Remove from the oven and let it cool completely on the baking sheet. As it cools, it will become crispy.
- Once the granola is completely cool, add the dried cranberries
- Add granola to a bowl of Nancy’s Organic Whole Milk Yogurt and enjoy!
