Pumpkin Spice Whipped Cottage Cheese Pudding Cups

Featured Product: Nancy’s Organic Whole Milk Probiotic Greek Yogurt and Nancy’s Organic Whole Milk Cottage Cheese

 

Ingredients

  • 1 C. Canned Pumpkin Puree (unsweetened)
  • 1 C. Nancy’s Organic Whole Milk Cottage Cheese
  • 1/4 C. Nancy’s Whole Milk Plain Greek Yogurt
  • 1/4 C. Honey or Maple Syrup (adjust to taste)
  • 1 tsp. Pure Vanilla Extract
  • 1 tsp. of Pumpkin Spice
  • A pinch of Salt
  • Chopped Pecans (for garnish)

Directions

  1. In a blender or food processor, combine the pumpkin puree, cottage cheese, Greek yogurt, maple syrup, vanilla extract, pumpkin spice, and a pinch of salt.
  2. Blend until the mixture is smooth and well combined. Taste and adjust the sweetness if needed.
  3. Add to individual serving cups and chill for 2 hours.
  4. Top with pecans and enjoy!
